Chicken Braised In Fish Sauce and Ginger (Ga Kho Gung)

2 - 3 lb Chicken (cut ups)
1 tsp sugar for caramel 
1 Tbsp sugar
2 Tbsp Fish sauce
Black pepper
1/2 Tbsp garlic
1/4 cup chopped ginger (4 Tbsps)

Combine everything to marinade then braise for 20 - 30 minutes on medium heat with closed lid.

1 tsp sweet o*'t tuong
3 -4 Tbsp chopped lemon grass

BBQ buffalo wings

This is my first time trying to make hot wings. I marinated the wings with salt and pepper powder with a bit garlic powder before I fried them. I have the Louisiana hot sauce in the cabinet but I wanted to try something different, so I made it with bbq sauce instead. Basically, the bbq sauce is just everything that I can find in the cabinet and mixed it all together.

When I made this I didn’t measure the ingredients. The following recipe is my estimated version. Alter the amount of ingredients to match your taste.

Marinade (dry rub):
20 chicken wings
1 tsp salt
½ tsp paprika powder
½ tsp cayenne powder

BBQ sauce:
1/3 cup brown sugar
¼ cup ketchup
1/3 cup white wine
¼ cup Louisiana hot sauce
1 tbsp maple/corn syrup
¼ tsp salt
1 tsp cayenne pepper powder
¼ tsp paprika pepper powder
¼ tsp chili pepper powder
¼ tsp garlic powder
1 dash black pepper
1 ½ tbsp butter

Fry chicken:
Dry the chicken wings and marinade the chicken wings with dry rub.
Set for 5 minutes and fry the chicken for 10 minutes.

Make sauce:
Combine all ingredients in a pan that is large enough to add the chicken wings in later.
Heat the sauce on medium heat and stir until the mixture melts then turn off the heat.
Add the chicken wings and mix until chicken is covered with sauce. Serve hot.

Fish and Chips

This is what we had for lunch.

Ingredients:
4 catfish fillet
1/3 cup breadcrumbs
1/2 tsp salt
1/2 tsp garlic powder
1 dash black pepper

1. Mix breadcrumbs, salt, garlic powder, and black pepper in a bowl.
2. Coat catfish with breadcrumbs mixture.
3. Deep fry catfish.

If you want it a bit spicy you can add a few dashes of paprika or cayenne powder to the breadcrumb mixture.

Fried Tofu

This morning was quite cold so I made a cup of coffee to warm me up a bit. My husband always makes fun of my coffee for it has more milk and cream than coffee. I can't drink dark coffee because it's so strong and bitter for me. It was so cold this morning that I actually finished the whole cup in less than 10 seconds.

Here's a shot of the mangoes. We bought a box of ten mangoes for less than $5 at Sam's. It's now evenly yellow in texture. Very sweet in taste. It's delicious!

I fried some tofu for us to snacking throughout the day. Fried tofu dipping in soy sauce is fantastic!
